How It Is Made▾
Gaziantep "Diş Hediği" (a traditional dish prepared for a baby's first tooth) is made by sorting and washing wheat (of the type used for *aşure*) and chickpeas, then soaking them separately in water overnight. The chickpeas are drained, covered with fresh water, and brought to a boil; the wheat is then added, and the two are cooked together. The mixture is simmered over low heat—stirred occasionally—until the grains soften, open up, and have absorbed the cooking liquid. Once allowed to rest, the Gaziantep Diş Hediği can be garnished—according to personal preference—with ingredients such as pistachios, walnuts, various nuts, Turkish delight, granulated sugar, cinnamon, pomegranate seeds, honey, or molasses, and served either hot or cold.
