It is a traditional dessert prepared by mixing sugar with early-harvest Antep pistachios known as 'Boziç' in specific proportions. It is unique to the Gaziantep province and has been produced for many years.

How It Is Made▾
Early harvest pistachios are cleaned with cold water, dried, and shelled. The pistachio kernels are ground into fine particles in a mill. Sugar and water are boiled at a 2/1 ratio to reach 118°C, mixed with the pistachios, poured onto marble to cool, kneaded by hand, and sliced.
