It is wheat smoked over fire in the field while still green and before fully ripening, without removing its husks. It is a regional product with a green-brown color, resembling bulgur and rice, featuring a distinctive smoky taste and aroma. It has been produced in the Gaziantep region for centuries.

How It Is Made▾
Harvest (at 35-50% moisture, green wheat) → Drying in the shade → Burning in a gentle wind (with olive and grape wood) → Separating in the wind → Drying in the shade (down to 15% moisture) → Sorting
