It is a traditional dish prepared using roasted eggplant, strained yogurt, garlic, and mutton. It is especially popular in the summer months and is one of the most well-known dishes of Gaziantep cuisine.

How It Is Made▾
For the preparation of Gaziantep Alenaziği (Antep Alenaziği), seedless eggplants are preferred. The eggplants are roasted by turning them on all sides for 10-15 minutes, depending on the oven's temperature, then peeled and finely chopped. Pre-salted hand-minced meat (zırh kıyması) or cubed meat is skewered onto square or flat kebab skewers that fit the grill. They are cooked over a dying (low-ember) charcoal fire by turning them in the same direction. Garlic is added to strained yogurt according to taste and mixed. The roasted eggplants are placed in a tinned copper dish (sahan), the strained yogurt mixture is added on top, and it is lightly heated over low heat. The minced or cubed meat kebab cooked on the grill is placed on top, and it is served with clarified butter or butter infused with ground red pepper poured over it.
