Its Story▾ It is wheat smoked over fire in the field while still green and before fully ripening, without removing its husks. It is a regional product with a green-brown color, resembling bulgur and rice, featuring a distinctive smoky taste and aroma. It has been produced in the Gaziantep region for centuries.
